ACF Minneapolis Chapter Meeting April 29, 2003.
This evenings meeting was held at Burl Oak Golf Club and our host was Member Chef Mark Good. At about 6:30 PM our guest speaker Mike Holleman Corporate chef with Indian Harvest gave a very informative educational talk on Indian Harvest and when it started and where the rice industry is today.
Mike will also be at the ACF national convention showing his product in the exhibit area .Chef Mike and Chef Mark Good prepared some great dishes using some of the different rice blends produced by Indian Harvest. We then had Kevin Erickson sales manager of Lombardi Brothers Meats make a presentation on Murray’s all natural chicken. We were served some along with our dinner buffet. Thanks to all for a good educational portion of the meeting.
The monthly meeting was called to order at 8:10 PM. Officers present Frankie Jedneak, Jim Lund and Steve Schuster. The first order of business was committee reports; Andy Anderson presented awards from the UP Show to those that competed in the culinary competition.
The next report by Jeff LaBeau on fund raisers. We have a 200 hundred person dinner at the Faribault Golf course and Country Club for the local Catholic Church. The date is May 17 at 6pm. Chef Leon Hardeman chef de Brigade, Jeff LaBeau is chairing the event and Chris Dwyer is co chair. Please call Jeff LaBeau if interest in helping with this event. We also have on May 5th the Operation Share and Care hosted by the southeastern Minnesota Chapter to benefit The American Red Cross. All proceeds of this event will go directly to Local Military services and Humanitarian Aid for Iraq. Monday May 5th from 7pm to 11pm. The Best Western Apache, 1517 16th St. SW.
Old business Frankie gave us a recap on the 2003 Regional Conference. Are you really ACF Mpls. received gold and the Arrowhead chapter received a bronze plate. The Little Oscar went to the Baton Rouge Chapter Regional Chapter went to Milwaukee.
Chef Bo Kozak AAC was awarded the Steady Eddie award because he Is- Congratulations Bo.
Food network will be at this years NRA show taping the Culinary Classic competition. The 2004 Regional will be on March 31 to April 4 in Chicago. Some interesting changes taking place in student competition butchering and proteins cuts and products will be used.
Student chef of year will be cooking both levels regional and national. Chef of the year national cooking all level. Club Chefs are coming on board with our ACF certification program. Although they will remain as club chefs. R&D Chefs are also working with our certification program
Branding the ACF logo and all chapters to embrace less than one Logo. New web site at national you can put your chapter info on it along with other chapters. Regarding the president meeting the national feels that the new certification program was too soon. Many items will be ready to unveil at the National Convention.
Junior teams represent our profession and at the meeting it was stated the uniform dress code will be enforce by the Sgt. at arms at all regional meetings. Dress codes and Regulations will be in the packets for all junior team members. Big reason for this will be in Washington D.C. the Media and press will be all around. New guidelines are being written for which medals are to be worn at which dinner. All old membership applications to be thrown out. Please use only new ones. Office hours National are now extended till 7pm Monday through Thursday and Friday till 5pm
If you register and pay in full for the national convention by June 15, 2003. Your name will be in a raffle to win full registration to accompany the team going to Germany.
Tom Berg talked about the student going to national have to have their essay on cooking in to Chef Chris Dwyer by May 12, 2003. For those interest please see your instructor the have all the forms.
Tom then spoke on the regional knowledge bowl and how some of the members representing us acted in a very unprofessional manner. We also discussed the fund raiser that happened over last weekend with very poor turn out from the junior members.
New business
A motion was made by Bo Kozak to have a moratorium on the junior membership at large and to freeze all. Chapter finances ,until the board can reach a resolution. Seconded by Chuck Duberstein.
Much discussion continued and a call for the vote was made. Frankie asked all in favor to raise their hand the motion passed unanimously.
Tom Berg made a motion that we adjourn and seconded by Chuck Duberstein we closed the meeting at around 9pm.
